The perspective he gained from this experience encompassed both the business side of the industry and the practical preparation of the product in the kitchens of the finest restaurants in the area. What began as an unexpected consulting project for Sean in 1996, quickly grew into a passion to be front and center in the market place for Game meats in Canada. Sean opened his present location in Mississauga in 2005 with the primary purpose of offering Game meats, not as a novelty, but rather as an alternative to the Big Three: Beef, Pork, and Poultry. This was the start of Black Angus Fine Meats and Game. The retail availability of Game meats was once limited to farmers’ markets, but has now become a day to day operation servicing both wholesale and retail throughout the GTA. Black Angus Fine Meats and Game’s mission is to educate the public on the healthy aspects of the “Wild Side”, and to demonstrate that Game meats are not new, but rather in style again. If sales are any indication (and they usually are), the mission is succeeding! To those people who are concerned with how to properly prepare Game meats, Sean has access to some of the areas finest chefs who are eager to demonstrate how easy it is to prepare and serve these fine products, not only in recipes that look and taste great, but also are often a healthier alternative to the Big Three. Sean is thrilled with the opportunity that Angelo and Friends and The Outdoor Journal Radio Hour have provided to help him deliver his message. This has truly been a natural match from the beginning, and one Sean hopes will continue for many years. |
