Sean Kelly of Black Angus Fine Meats & Game will be visiting every week with an exotic recipe featuring wild game. Listen carefully and you could win a package of this weeks specialty meat. This week we talk about Bison Tenderloin Salad.

Black Angus Fine Meats & Game

Bison Tenderloin Salad

Ingredients

• 1/4 cup mayonnaise (to reduce calories try fat-free)
• 2 tablespoons Dijon mustard
• 1 tablespoon skim or 1% milk
• 2 teaspoons cider vinegar (you can use white wine vinegar too)
• 1 teaspoon prepared horseradish
• 1¼ teaspoons sugar
• 8 cups water
• 1 pound fresh asparagus, cut into 2 inch pieces
• 4 x 6oz Bison tenderloin steaks
• 1 large clove garlic, peeled and halved
• 6 cups torn mixed salad greens
• 2 large ripe tomatoes, cut into wedges
• Salt and Pepper

Directions

Salad Dressing:

  1. In a mid-sized mix together the mayonnaise, mustard, milk, vinegar, horseradish, sugar, salt and pepper to taste (dash of each). Cover and refrigerate.
  2. In a large saucepan, bring water to a boil. Add asparagus; cover and boil for 3 minutes.
  3. Drain and immediately plunge asparagus in ice water; drain and pat dry. Cover and refrigerate.
    Bison Tenderloin
  4. We always recommend grilling the steaks and since the tenderloin is very lean you’ll want to coat the grill rack with nonstick cooking spray before starting.
  5. Rub steaks with garlic and then discard the garlic.
  6. Sprinkle with salt and pepper.
  7. Grill steaks, covered, over medium heat. If you like it rare aim for 145 degrees (about 3-4 minutes per side). For most people a safe time is 6-8 minutes per side or meat reaches desired doneness (for medium-rare, a meat thermometer should read 145F; medium, 160F; well-done, 170F).
  8. Remove from the grill and wait 4-5 minutes
  9. Cut thinly with the grain.

On four serving plates, arrange the greens, tomatoes and asparagus. Thinly slice beef; place over salad. Drizzle with dressing.
