Traveling around the world to produce popular television programs such as "The Fish'n Canada Show" and "The Outdoor Journal", Ang and fellow explorers Pete Bowman and Mike Miller are no strangers to outdoor life. They use their experience and a unique sense of humor to cover the environmental issues and events that are important to the Canadian Outdoorsman.

Going Wild with Black Angus Fine Meats & Game

Sean Kelly of Black Angus Fine Meats & Game will be visiting every week with an exotic recipe featuring wild game. Listen carefully and you could win a package of this weeks specialty meat. On this weeks show, Sean presents Thai Style Quail Appetizer.
 

bison_rib_eye.jpgBison Ribeye With Roasted Garlic Potato Salad

Yield: 4 servings

Bison Steaks:
4  Bison Rib eye Steaks, about 1 inch thick
to taste Salt and Pepper

Potato Salad:
1 ½ lbs Mini Red and/or White Potatoes, cooked and diced
1 ½ cups Real Mayonnaise (preferably homemade)
5 cloves Garlic, Roasted and minced finely*
5 sprigs Fresh Thyme
4  Green Onions, finely diced, reserving the dark green for garnish

Method for Potato Salad:

1. Mix mayonnaise, minced roasted garlic cloves, fresh thyme leaves and most of  the green onions (reserving some for garnish). 
2. Mix mayonnaise mixture over potatoes, chill and serve cold with the rib eyes.

Method for Rib eyes:

1. Preheat grill or BBQ to 400 F.
2. Season rib eyes with salt and pepper.
3. Grill to no more then medium rare.  Approximately 4 minutes on one side and 3 on the second side.
4. When grilling any kind of steak, place on grill and do not turn, touch or squish down the steak.  Flip the steak only once and cook to desired doneness.

Roasted Garlic:
 Preheat oven or toaster oven to 400 F.  Place whole garlic cloves, on baking  sheet, rub with olive oil and place oven for 15 – 20 minutes or until the cloves  become golden and soft. 
Note: Roasted garlic will not cause garlic breath!  Eat all you want.

Nutrition per ½ pound serving: Total Fat 10 g, Saturated Fat 4 g, Cholesterol 141 mg, Protein 53 g, Iron 29%
